Casseroles
Nothing beats a casserole on a cold winter night, ease of preparation and succulent flavors combine to make them one of the winters favorite foods. There is no limit to the variety of foods that can go into a casserole!
Chicken, pork, beef and seafoods are the basics, however, there are also vegetarian/meatless favorites starting with such food as squash, eggplant and artichoke just to name a few.
Anything is game in a casserole, pasta, vegetables, meat, eggs, sauces and there are even delicious fruit casseroles for desserts.
Casseroles can be made for breakfast (try hash browns, eggs, ham and cheese, using crescent rolls as the base), brunch (how about day old French bread, blueberries and cream cheese) lunch (ground beef, condensed soup, cheese and French-fries) or supper (mashed potatoes, ground beef, onion, mushrooms, cheddar cheese) the varieties are endless.
After Thanksgiving, try turkey in a casserole, it is a different way to prepare turkey when everyone is tired of the sandwiches and soup! Use wild rice, cubed turkey, condensed soup, celery and onions for a tasty casserole.
Any casserole that calls for chicken can be adjusted to use with turkey quite easily.
Casseroles can be frozen (in most cases) and reheated at a later time, or freeze them in individual servings for after school snacks for one. What man or woman wouldn't like to take a serving of their favorite casserole to lunch.
When cooking for one or two, casseroles are fairly simply to pare down to smaller servings. If you have a favorite, (mine is chicken, tortilla chip bake) that doesn't freeze well, just prepare the main ingredients and freeze in small portions, add tortilla chips after it is thawed and before you bake it!
Pot-lucks are a wonderful place to bring a casserole; you can make a large amount of food, usually for a small amount of money. Remember that casseroles are limited only by your imagination and willingness to experiment; they can be fun to create and are a wonderful taste treat.

Breads for EveryTaste
Many diets require you give up breads because of the carbohydrates in it, however it is more often what you put on the bread that brings about the majority of the calories.
It doesn't matter if you bake your own bread, or buy it in the store, you get more fiber and nutrients when your bread contains whole wheat flour or any one of the natural flours.
White breads are made with bleached flour which strips away the fiber and nutrients they naturally provide. Enriching white flour adds some of the nutrients, but it still isn't as high in fiber as whole grains. Bread can be made with beer, ccoking removes the alcohol, caraway seed; it can be French, sourdough or Hawaiian, hard or soft.
Among the popular types of breads available are fruit breads like banana bread. Zucchini bread is sweet bread and absolutely delicious. Some breads have very strong flavor like Rye bread.
Cornbread can be sweet corn bread or Mexican cornbread mde with chilis and sausage. Fried breads are also popular, and can be made from bread dough, or cornbread mix.
Muffins come in a wide variety from apple to blueberry and many other types of fruit and berries. Pancakes and waffles are also breads and can have as many flavors and varieties as muffins, fruits, chocolate chips and butterscotch chips are just a few.
Crackers are also in the bread family and there are unlimited types on the market, from standard saltine, to club crackers, cinnamon crackers and multiple flavored crackers.

Becoming a More Efficient Cook
Efficiency will save you lots of time in the kitchen, to accomplish this, learn to do more than one thing at a time. Increased preparation time before cooking is another way to become a faster cook.
Read your recipe before starting, this will save you many headaches, like getting a dish ready and finding out you need bat wings and you don't have any! Just kidding, I don't stock bat wings in my kitchen eithe, but you get the idea.
Get everything you need together, follow the order they are used in the recipe, this allows you to be sure that you have everything you will need. Once you are sure you have everything, measure out the ingredients according to the recipe.
Organize all of your ingredients on one side of the work area, as you use something, move it to the other side, lessens confusion as to whether you used it or not.
Use your cutting board for all of your non-meat items first, this avoids cross contamination. If you have to prepare the meat first, wash the cutting board thoroughly before using it for any other food items.
Keeping a sink of hot soapy water will help cleanup later on, just drop used utensils in the water and allow them to soak.
Sometimes it is better to use your hands to mix something than it is to use a utensil; it also saves time washing up later. I for one love making mud pies when I was a child, the only difference is the mud is now hamburger and the crushed leaves are now herbs.
Salads are always mixed more evenly if they are tossed with your hands. Make sure to wash your hands thoroughly, inexpensive plastic gloves will help if you didn't like playing in the mud.
Coat measuring cups, spoons and molds with non-stick spray before putting everything sticky in them, the ingredients will slide right out. To prevent having to clean a burned on, sticky mess on your boiler pan, line the pan with foil and spray the rack with non-stick spray.
Re-sealable plastic is great for marinating and coating foods with flour or cornmeal.
Planning in advance can save you a lot of time in the kitchen opening up your evenings to spend more time with your family.

Setting Up a Family Cookbook
Want that special something for the next family reunion? Try a family cookbook, involve the whole family and collect the recipes they each like the best. This is a great way to get your Aunt Margie's recipe for Apple Pie!
If the family reunion is to be a pot-luck, have them bring a recipe card for the dish they will be providing. This method has several advantages; a picture of the person can be added to the recipe when the book is compiled.
Computers are great for this project, and using a regular notebook allows people to add to the recipe book at a later date. (You can even email the book to those who have a computer and are online to help save on postage.)
In addition this can be used as a great memory for the family reunion, and a way to get pictures of all the family members who forgot to bring their cameras! Just add photos to the book and it will bring funny and happy memories for years to come.
If there is a problem of the cost of materials, have each member who wants one donate a small fee to cover the costs of the paper, ink, notebooks and postage. I don't know how many times I have gone to a pot-luck and spent lots of time asking for the recipe!
I have never been to where I didn't find several dishes I really liked and wanted to make for my family later.
If you would rather have the recipe on hand at the reunion, just request, in advance, everyone provide their favorite recipe, put an old picture of them with it, this can present even more fun by not identifying the person in the picture!
You may want to put an index in the back so they can tell in the years to come, who is in the picture.
Whatever means you use, this is a great momento of a special day for your family, enjoy it, and remember to send one to the family members who couldn't be there for whatever reasons.

Celebrating with Irish Whiskey Cake
Corned beef and cabbage and green beer may be traditions of St. Patricks Day, but how about Chocolate Irish Whiskey Cake? This particular Irish Whiskey Cake is made with chocolate and is deserving of a definite thumbs up for the recipe. The cake is not frosted or glazed, you wrap it in foil and drizzle whiskey over it every couple of days. The whiskey doesn't overpower this delicious , flavorful and moist cake, but it does give it a definite zing! This is a recipe you will want to make again even when there are no shamrocks around.
IRISH WHISKEY CAKE
2 1/2 cups flour
1 tablespoon baking powder
1 tablespoon baking cocoa
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup butter, softened
1 cup sugar
1/2 cup light brown sugar, packed
3 eggs
1/2 cup strong black coffee
1/2 cup Irish whiskey
Cinnamon whipped Cream, optional
Preheat oven to 350 degrees.
Stir together flour, baking powder, cocoa, salt and baking soda.
Cream butter and sugars; beat until light and fluffy. Add eggs and beat
at high speed 3 minutes.
Combine coffee and whiskey. Blend the flour mixture alternately with
the coffee and whiskey mixture into the creamed mixture, beginning and ending with flour.
Beat well after each addition. Pour into a well-greased 9-by-13-by-2-inch cake pan or tube
pan (we used a Bundt pan). Bake 35 to 45 minutes or until cake springs back. Cool.
You can serve the cake as soon as it cools with the accompanying Cinnamon whipped cream.
Or poke holes in the cool cake and drizzle about 1/4 cup (less if you wish) whiskey over the entire cake. Wrap the cake with foil. Allow the cake to set overnight. The next day repeat the whiskey drizzle. Allow cake to set wrapped in the foil for another 24 hours before serving. For the final drizzle, we combined about 1/4 cup melted butter with the whiskey.

2 tablespoons confectioners' sugar
1 teaspoon cinnamon
Note: Put bowl and beaters in the freezer for 15 minutes before whipping cream.

Blending Chocolate
Different types of chocolate or couvertures are made by blending varying amounts of chocolate liquor with the fat (cocoa butter). These types are identified by the list of ingredients in each, with the ingredient with highest quantitybeing listed first. U.S. chocolates have a lower percentage requirement for chocolate liquor than other countries, so sugar may be listed as the first ingredient:
* Plain Dark Chocolate: sugar, cocoa butter, cocoa liquor and occasionally vanilla.
* Milk Chocolate: sugar, cocoa butter, cocoa liquor, milk or milk powder and vanilla.
* White Chocolate: sugar, cocoa butter, milk or milk powder and vanilla, white chocolate is the only one that does not use cocoa liquor, therefore its milder taste.
While some manufacturers, for reasons of purity, prefer not to, in most instances an emulsifying agent like soya lecithin is added.
Soya lecithin is the emulsifier which keeps the ingredients of cocoa butter and chocolate from separating in candy bars. Failure to use an emulsifier can cause a loss of the perfectly smooth texture, some chocolate manufacturers use PGPR, (Polyglycerol Polyricinoleate) which is an artificial emulsifier made from castor oil; this allows the use of less cocoa butter while retaining the delicate taste and texture of chocolate.
Processing also has a great deal of influence on the texture and feel of chocolate in the mouth. (The physical and chemical reaction of chocolate in the mouth is called mouth feel). Conching is part of the process of blending chocolate; it involves a container filled with metal beads that act as a grinder. Frictional heat keeps the blended chocolate liquid and conching creates smaller cocoa and sugar particles causing the smooth feel in the mouth.
Conching lasts from four to seventy two hours, the longer it takes the higher the quality of the chocolate. After conching the chocolate is stored in heated tanks (approximately 45-50 degrees celsius) to wait for final processing.
Signature blends are developed by different manufacturers by changing the proportions of ingredients shown above. The finest plain dark chocolates contain a minimum 70 % cocoa (a combination of solids and butter.)

Benefits and Adverse Effects of Chocolate
The reputation chocolate has for being a mood elevator can be based in part on its chemical content; chocolate contains several natural mood altering chemicals including phenylethylalanine and anandamide.(Phenylethylalanine is the chemical found in the blood of people who are in love.) One of the active ingredients, anandamide stimulates the same parts of your brain as marijuana, however it would require eating 25 pounds of chocolate at one time to get anywhere near the effects you get from marijuana.
While there is a lot of discussion about this, cocoa beans, cocoa powder and plain dark chocolate are high in saturated fats; therefore some believe that it increases the possible risk of heart disease. Milk chocolate has both high levels of saturated fats and cholestral, high levels of these in your blood increase your risk of heart disease when eaten. There are studies that contradict these findings, showing that foods high in stearic acid, the saturated fat in cocoa products lower the risk of blood clots. Chocolate is also high in flavonoids, these are the antioxidant chemicals that give the heart-healthy reputation to red wine.
While there is less caffeine in chocolate than in a cup of coffee of equal size, people who are sensitive to caffeine may have problems eating or drinking chocolate, it may cause them to have mild jitters.
Chocolate is one of the 12 foods shown to be most likely to trigger food allergies, upset stomach, swelling of the lips and eyes, and hives are some of these symptoms. Home Remedies - Coughs
